I spent so long looking for prep ahead breakfast ideas that would be quick and easy to prepare at night and a fast go to for those busy early morning before work and school. This Make Ahead Fruit and Greek Yogurt Parfait from Project Meal Plan is the perfect solution.
Our family particularly enjoys these on warm mornings straight out of the fridge. I love that the granola stays crunchy and doesn't get soggy as I feared. The family loves that these are completely customizable to what they each love with such minimal effort.
There are so many creative and fun combinations of flavors for this breakfast. Our favorite combinations have been the Original Mixed Berry, the Blueberry Lemon Bar, the Peanut Banana Crunch, Penut Butter & Jelly, and Apples and Cinnamon.
Ingredients
For each Parfait you will need:
6 oz. (3/4 cup) 2% plain Greek yogurt
1 teaspoon maple syrup
1/3 cup granola
Choose a flavor for your parfait
Original Mixed Berry:
1/3 cup blueberries
1/3 cup raspberries
Blueberry Lemon Bar:
1/2 cup blueberries
2 tablespoons lemon juice
2 tablespoons slivered almonds
Apple Cinnamon:
1/2 honeycrisp apple
1 tablespoon lemon juice
2 tablespoon slivered almonds
1/4 teaspoon cinnamon
PB Banana Crunch:
1 small banana, 1 tablespoon peanut butter, 1/4 cup peanuts
Peanut Butter & “Jelly”:
2/3 cup smushed raspberries
1 tablespoon peanut butter
1/4 cup peanuts
Preparation
In a small bowl, mix Greek yogurt and maple syrup until well mixed. Mix 1 teaspoon of maple syrup per 6 ounce serving of yogurt.
Layer yogurt and selected parfait add-ins in a small mason jar or sealable container. I like to do two layers each, first yogurt then add-ins, and repeat.
Top with granola. You can also wait to add the granola until the night before, or right before eating, for maximum crunch.
Store in the refrigerator and eat within 1-2 days. If waiting to add the granola later, the parfait should be consumed within 4 days.
