These Almond Blueberry Waffles were a hit with the whole family and even those with the biggest sweet tooth agreed that the maple syrup was very optional , these waffles are great straight-up!

Packed with wonderful ingredients such as almond flour, buttermilk, eggs, and blueberries, these waffles are a fantastic source of protein, probiotics, antioxidants and other vitamins and minerals. An overall great way to start the day, or even as an energy packed snack.

Ingredients

  • 3/4 cup oat flour

  • 3/4 cup almond flour

  • 1 cup all-purpose flour

  • 2 teaspoons baking powder

  • 1/4 teaspoon salt

  • 1 teaspoon cinnamon

  • 1 1/2 cups buttermilk

  • 2 eggs

  • 5 teaspoons melted butter, cooled

  • 1 tsp. vanilla extract

  • 1 pint fresh blueberries

Preparation

  1. Preheat waffle iron.

  2. Sift together dry ingredients – set aside.

  3. Whisk wet ingredients together. Slowly stir in the dry ingredients and stir until just blended. The mixture may be lumpy.

  4. Ladel the batter into the waffle iron and sprinkle with blueberries. Cook until browned on both sides.
